Pickles Biography

Pickles was started back in 1998 by the Berner Family. Heirs of world renowned classical chef Woodrow Ingram as a tribute to the great chef and his life's work. In his day Woodrow was among the best chefs in the world showcasing his art in such places as the famed Waldorf Astoria hotel, Catering for the Queen of England & being one of the most in demand Chefs in New York. In the kitchen Woodrow was one of the greatest & to those of us who got to spend time with him out of the kitchen he was truly world class!!

It was just natural that Joyce was born with a cooking gene, growing up learning his philosophies both in and out of the kitchen. Alan who never worked with food before, joined the family in 1970, soon after he too entered the foodservice industry. Thirty-five years later Alan has worked in several areas of food service & is a food purchasing specialist. Greg followed in his grandfathers footsteps starting in the family business at a very young age & today is a Certified Corporate Chef with the honor of being the youngest restaurantuer to win the Top 25 Business award in Central Florida. Kim joined the family business in 2002 & has grown from an office assistant to the Catering Coordination manager.

Pickles original N.Y. Deli was started in an old convenience store in downtown Orlando. The concept was a true New York Style delicatessen that focused all of it's energies on servicing all of the Breakfast, Lunch and catering needs of the business community within Central Florida. Quickly, Pickles quality and service began to get a local buzz. Many business meetings began to take place in our dining room. People from all different income levels began to spend their lunch hours there discussing everything from sports to politics. (Syndicated Radio Talk Show Host Jim Philips reffered to Pickles as the Orlando version of the T.V. show Cheers.) Pickles quickly became the out of the way meeting place where everyone met for lunch. Then, Orange County Chairman Mel Martinez(Now Senator for the State of Florida), discovered us. Along with the majority of his colleagues, he frequented Pickles on a daily basis. Scott Joseph, The Orlando Sentinel Food Critic, wrote a full page article, on the food quality and level of service. After this article Pickles' popularity and business grew exponentially.

Now that Pickles retail operations were a success, it was only natural that catering would follow. The meetings that were taking place in the dining room were being moved to the Board room & Pickles followed suit. Pickles was now a caterer & still with the same focus. offering services to cover any need of the Business community. Pickles Catering was selected as the ONLY FOOD SERVICE PROVIDER TO WIN THE TOP 25 BUSINESS AWARD in 2000'. Then several months later the regional president of Boars Head Provisions named Pickles The "Flagship Food service operation" for Boars Head in this region. These humble beginings were the foundation for many of the Awards, Accommodations, Articles & Tributes we have been honored with by the Business community we service. By 2004 Pickles had grown to 6 Retail Restaurants 1 catering facility, over 100 vending machines & several large food services contracts. In 2007 Pickles purchased Deli Fresh Wholesale. A pre - Packaged sandwich & salad manufacturing facility in Longwood Fl. focusing on the private Label wholesale manufacturing of food service menu items. Deli Fresh became Pickles Express wholesale in 2008'.

We take the time to understand the full spectrum of your needs & we custom design menus around those needs. Each client gets a catering coordinator assigned to them. This coordinator takes the time to understand the specific needs of your company & then build menus & options specific to those needs. Our team understands that a Doctor's office sales rep. has a completely different set of needs then an executive board meeting. The only consistants are that the menu & presentation have to impress everyone attending, The cost has to please the accountants & Ultimately the caterer needs to be 100% relied upon at all times! The owner of Pickles was even awarded the Good Citizenship award for 1998 by the Orlando Chief of Police for playing a major role in a Shoes for Guns event that helped to remove over 100 illegal guns from the streets of Central Florida to help make our community safer.

We offer contract feeding from meals delivered to your site to complete operation of your food service dept.

Food Quality

As part of our commitment to being a 1st class Business partner 1st & formost we offer many pricing programs to suit any contract feeding needs, however, our extensive restaurant background has enabled us to use only the freshest and highest quality ingredients and still keep prices low.

Customer Service

Customer Service is one of the 3 most important aspects of our facilities, in conjunction with the Food Quality and Sanitation. These are the fundamental items behind our entire reputation.

Customer Input

The only way that Pickles can take care of any and all of the Breakfast, Lunch and Catering needs of business community effectively is to have constant input from the people we serve. We do this in many different ways. Comment cards are placed on every table and at the to go counter. We also talk to every guest and find out their special requests. After every catering event we contact the host and find out if there would be anything to make their next event even better. We take all the information and constantly change things to fit these requests.

Sanitation and Cleanliness

At all of the Pickles Concept Restaurants we consider our Cleanliness and Sanitation habits to be the most important control factor that we have. All of Pickles Employees are Certified Food Handlers! Each facility has Certified Food Managers and the Owner is Certified in sanitation management with honors by the American Culinary Federation. At Pickles; sanitation habits are taken so seriously that we hire our own internal Board of Health dept. to ensure that we are always exceeding our own expectations. We clean and sanitize everything in our kitchens constantly. Every employee wears gloves whenever they touch any food products & they are constantly re-trained to ensure they are always operating at the highest standards. Hand sanitizer is next to every work station and every employee is required to wash and sanitize their hands every time they enter the kitchens. Our Manufacturing Facility is governed by the U.S.D.A & our production kitchens are "Clean Room Sanitized"

School Lunch Program

All staff involved with Children's Food Services are required to constantly be re-certified in sanitation, food handling and can meet all 4H requirements prior to working in these areas.

Experience and Training

All of the Pickles Staff are trained and certified by the State of Florida in Food Handling and Sanitation. The department managers are all certified Food Managers by the State of Florida. The Owner Greg Berner is a Certified Corporate Chef. He is certified by the American Culinary Federation and has a Food Service Degree and Restaurant Management Degree form Rockland College in New York. Greg has worked in some of the highest volume restaurants and catering facilities in the world, including but not limited to: managing several of the catering and restaurant kitchens at Walt Disney World. The Pickles staff are all experienced in many levels of restaurant work. Each area has a manager and several employees to handle all of the work load.
